ENSALADA CESAR

Salad with a First and Last Name: The Chicken Caesar

If we’re talking about famous salads, the Caesar salad is, without a doubt, one of the most iconic in the world. Its combination of crisp Romaine lettuce, creamy dressing, Parmesan cheese, and golden croutons has conquered palates in every corner of the planet.

But did you know that this salad wasn’t born in Italy or France, but in Mexico? Or that at PANNA, we have a special trick to make our version the tastiest one you’ve ever had? Stick around, because here we tell you everything about this timeless classic.

WHO INVENTED THE CAESAR SALAD?

To find the origin of the Caesar salad, we have to travel to 1920s Tijuana, Mexico. There, Chef Cesare Cardini, an Italian immigrant, owned a restaurant that was frequently visited by American tourists crossing the border in search of a good atmosphere and tasty food.

Legend has it that on a July 4th, in the heat of the U.S. Independence Day celebrations, the restaurant was packed and ingredients in the kitchen were running low. Cardini, keeping his cool, improvised with what he had on hand:

  • Romaine lettuce
  • Garlic
  • Lemon juice
  • Parmesan cheese
  • Egg yolk
  • Toasted bread
  • Olive oil
  • Worcestershire sauce

The result was a simple salad, but with a combination of flavors so balanced and delicious that it became an immediate success. Since then, the Caesar salad has crossed borders to become a star dish on menus worldwide.

SECRETS AND CURIOSITIES OF THE CAESAR SALAD

  • The original dressing does NOT have anchovies: Many believe anchovies are essential, but Cesare Cardini’s recipe didn’t include them. Over time, some chefs added them to give the flavor a more “umami” kick.
  • The secret is in the lettuce: For a perfect Caesar, the Romaine must be cold and very dry. If it’s wet, the dressing won’t stick, and the flavor gets diluted.
  • Croutons make the difference: In many versions, croutons go unnoticed, but they should be golden and well-seasoned to provide that necessary texture contrast.
  • A main course: While the original was an appetizer, the Chicken Caesar Salad has become a popular and complete meal on its own.

PANNA’S SECRET TO MAKING IT IRRESISTIBLE

At PANNA, we know that a well-made Caesar salad can be just as satisfying as a main course. That’s why we have a special touch to make it unique:

  1. Our homemade dressing: Creamy, with just the right hint of garlic and a perfect balance between tanginess and smoothness.
  2. Freshly baked croutons: No bland, dry bread here; at PANNA, our croutons are prepared specially to make them addictive.
  3. Juicy grilled chicken: For our Chicken Caesar, we use perfectly seasoned, golden-brown chicken breast, making it a complete and delicious meal.
  4. The finishing touch: An extra sprinkle of freshly grated Parmesan cheese to boost every bite.
