On the Caribbean Coast, empanadas reflect the richness of the sea and Afro-Caribbean heritage.
- Fillings: Usually beef, chicken, or seafood like shrimp and fish.
- The Dough: Made with white corn, giving them a softer flavor and a slightly different texture.
- The Flavor: The filling is well-seasoned with garlic, bell pepper, achiote, and coconut.
- Tradition: They are a must-have during the Barranquilla Carnival, where you can find them on every corner filled with fresh delicacies from the sea.
CUNDIBOYACENSE EMPANADAS: THE HIGHLAND TRADITION
In the regions of Cundinamarca and Boyacá, empanadas reflect the deep influence of Andean cuisine.
- Bogotá Style (Santafereñas): These feature a filling of beef or pork mixed with rice, peas, and potatoes. The white corn dough is thicker, resulting in a dense, satisfying texture. They are served with ají santafereño (spicy salsa).
- Boyacá Style: These typically contain beef, potato, and sometimes fava beans. Interestingly, the spicy sauce in this region often includes guasca, the same herb used in the famous ajiaco soup.
NARIÑO EMPANADAS: ANDEAN AND ECUADORIAN INFLUENCE
In southwest Colombia, near the border, these empanadas show a unique blend of flavors.
- The Mix: Made with white or yellow corn and filled with pork, chicken, or cuy.
- The Seasoning: Spices like cumin and garlic are key, and they are sometimes served with a peanut-based spicy sauce (ají de maní).
- Festivals: They are a traditional dish during the festivities of San Juan and San Pedro, known for being large, crispy, and delicious when paired with fresh cheese.
