Take, for example, the pabellón criollo. It was born as a complete, flavorful, and potent dish to feed laborers and peasants. With rice, shredded beef, black beans, and tajadas, it is a true energy boost that also represents the country’s diversity.
Then there are Venezuelan empanadas, made to be eaten with one hand, without the need for silverware or a table. They are ideal for the rushed worker having breakfast on the street on their way to the job. Whether filled with cheese, beef, baby shark (cazón), or whatever is in the kitchen, they are a practical and delicious solution that never fails.
In other countries, we find similar stories:
- In Mexico, tamales were and continue to be the fuel for the workday.
- In Argentina, locro has been prepared for centuries as a nutritious stew for those who work the land.
- In Colombia, ajiaco is more than a soup: it is a labor and family tradition, filled with potatoes, chicken, and corn.
THE “VIANDAS” THAT SUSTAIN THE DAILY GRIND
Before apps and home delivery existed, viandas (packed lunches) were the true queens of lunchtime. In many homes, they still are.
A vianda is that container filled with rice, beans, roast pork (pernil), stewed chicken, or ground beef that mom, dad, grandma, or you yourself prepare with care. The Latin American worker’s lunchbox doesn’t just feed the body; it soothes the soul. It is the invisible bond that connects the home with the office, the factory, or the workshop. It’s a reminder that someone thought of you and cooked for you with love.
